This bowl brings together all the classic Middle Eastern flavors we know and love! Every component complements the next — juicy mini koftas, roasted veggies, fresh tabouli, and creamy tzatziki. These koftas may be small, but they pack big flavor and protein.
Ingredients
For the Kofta:

1 lb lean ground beef

½ tsp salt

½ tsp black pepper

½ tsp garlic powder

½ tsp allspice

½ tsp cumin
-
½ tsp chili powder

½ tsp paprika

½ tsp kofta spice mix (optional but highly recommended. It can be found at your local Middle Eastern grocery store.)
Vegetable mixture (to mix into the beef):

¼ onion

1–2 garlic cloves

Handful of fresh parsley

½ jalapeño (optional, for a mild kick)
For the bowl:

Roasted eggplant
-
Peeled and roasted baby potatoes

Fresh tabouli salad

Tzatziki sauce
Instructions

Make the Kofta Mix

In a bowl, combine the ground beef with all the listed spices.

In a food processor, pulse the onion, garlic, parsley, and jalapeño until finely minced.

Strain any excess liquid, then add the mixture to the beef and mix until well combined.

Shape and Cook the Kofta

Form small, oval-shaped patties (about the size of mini footballs).

Heat a large pan over medium heat with a drizzle of oil.

Cook the koftas for about 3–4 minutes per side, until browned and fully cooked through.

Assemble the Bowl

Add a layer of roasted eggplant and roasted baby potatoes.

Top with mini koftas, a scoop of tabouli, and a dollop of tzatziki.
