Middle Eastern Mini Kofta Bowl

This bowl brings together all the classic Middle Eastern flavors we know and love! Every component complements the next — juicy mini koftas, roasted veggies, fresh tabouli, and creamy tzatziki. These koftas may be small, but they pack big flavor and protein.

Ingredients

For the Kofta:

  • 1 lb lean ground beef

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp allspice

  • ½ tsp cumin

  • ½ tsp chili powder

  • ½ tsp paprika

  • ½ tsp kofta spice mix (optional but highly recommended. It can be found at your local Middle Eastern grocery store.)

Vegetable mixture (to mix into the beef):

  • ¼ onion

  • 1–2 garlic cloves

  • Handful of fresh parsley

  • ½ jalapeño (optional, for a mild kick)

For the bowl:

  • Roasted eggplant

  • Peeled and roasted baby potatoes

  • Fresh tabouli salad

  • Tzatziki sauce

Instructions

  1. Make the Kofta Mix

    • In a bowl, combine the ground beef with all the listed spices.

    • In a food processor, pulse the onion, garlic, parsley, and jalapeño until finely minced.

    • Strain any excess liquid, then add the mixture to the beef and mix until well combined.

  2. Shape and Cook the Kofta

    • Form small, oval-shaped patties (about the size of mini footballs).

    • Heat a large pan over medium heat with a drizzle of oil.

    • Cook the koftas for about 3–4 minutes per side, until browned and fully cooked through.

  3. Assemble the Bowl

    • Add a layer of roasted eggplant and roasted baby potatoes.

    • Top with mini koftas, a scoop of tabouli, and a dollop of tzatziki.

    • Garnish with fresh parsley or a squeeze of lemon juice, if desired.
